Yes, the more stressed / slow thinker you are, and the more work you need to put to prepare these interviews. It's not uncommon for people to practice for years.
I don't think these companies exactly want this type of profile, but when you interview 10000s of people, you need some consistent criteria so that all candidates are treated equally. With that constraint, I don't think you can find a better interviewing system.
